It means that the lower is the acidity the highest is the quality.
We are what we eat so it is much better to use as condiment and to fry always an excellent olive oil, that means only EXTRA VIRGIN OLIVE OIL.
Extra virgin olive oil is only produced by a cold press and is not legal to adulterate the acidity using non extra virgin olive oil. So pay attention when you buy your bottle of extra virgin olive oil. Read carefully the label. And double check the origin and the brand.
